Lotus Biscuit and Fudge Cupcakes


So I am ADDICTED to the Lotus Biscoff biscuits, and I went into poundland of all places and they had a HUGE packet of them, and other than eating them all day every day I wanted to do something fun with them so I decided to attempt to make some cupcakes and adapt a plain cupcake recipe into Lotus biscuit and fudge cupcakes and mmmmm they worked! 




You will need:
-          2 bowls (at least one glass)
-          A saucepan
-          A whisk
-          Wooden spoon
-          Scales
-          Cupcake tins
-          Cupcake cases
-          Your Mary Berry hat on

For the cakes
-          4oz/117g butter
-          4oz/117g light brown sugar
-          4oz/117g self-raising flour
-          2 Eggs
-          3 ‘fudge’ bars

For the topping
-          Lotus biscuits
-          Butter cream


Method:
-          Mix together the butter and sugar until soft and creamy
-          Whilst mixing, put a saucepan full of water on the hob to boil and put the fudge bars in a bowl on top to melt (alternatively put in microwave but I don’t have one)

-          Add one egg and half of the flour, mix in… then add the next egg and the rest of the flour and whisk up
-          When the fudge has gone kind of soft and squishy (it won’t melt into liquid …believe me I stood there for ages waiting for it to) put it into the cake mixture and whisk up until you can see its mixed in  and you can only see little fudge chunks


-          Fill the cupcake cases up 2/3 full and put into the oven for 20-30 minutes (keep checking!! You don’t want burnt cupcakes)
-          When they’re done pop them on a cooling rack and leave them to cool completely
-          I was lazy and didn’t want to make any (because shop bought icing tastes so god damn wonderful) so I got some buttercream flavoured icing (which tastes like heaven in your mouth)
-          Spoon a bit of the butter cream on top of each cake so its covered and looks all creamy and yummy & break some lotus biscuits into pieces and pop a bit on top of each cupcake
-          Voilaaaaaa, enjoy ft cup of tea/mug of hot chocolate
